Local Love: Blackbelly Market & Restaurant
We are highlighting Boulder’s very own Blackbelly in this local love, a farm to table eatery & butcher shop known for its charcuterie, burgers, steaks and the famous hand-cut Kennebec fries. Open since November 2014, award winning Chef Hosea Rosenberg transformed his catering business, along with a food truck and farm, into the highly anticipated Blackbelly restaurant. Rapidly becoming a Boulder staple and premier dining spot in Colorado. Its swift success spurred an expansion within a year, birthing Blackbelly Butcher and Market: Boulder's sole artisanal butcher shop, licensed to produce and sell its own cured and fermented meats. Alongside a variety of house-made provisions, the shop serves breakfast and lunch daily, and of course, little piggy hospitality.
Blackbelly has a super tight-knit relationship with local ranchers and farmers, most of whom are just a stone's throw away from the restaurant. By working directly with partners they trust, and by investing in free range products, this results in helping to make all the meat at Blackbelly taste amazing and top-notch- levels above its competitors.
Along with their Boulder establishment, they have expanded, opening a location in Denver. The shop hones in on crafting housemade charcuterie, salami, salumi, and deli meats, spearheaded by Michelin Young Culinary Professional, Kelly Kawachi, alongside the esteemed Blackbelly team. This location is only open for breakfast and lunch, and does not offer quite as vast a selection as its Boulder counterpart. However, they serve amazing and delicious products, and they are always stocked with essentials. Beer and wine will also be available at this location in the near future.
